Best type of cardio for those with bad back or knees or feet, etc...

Ok.  I want to pose this question for my own benefit and maybe for those who have wondered the same thing.  Two years ago while finishing my jog of 2.5 miles I sprinted the last 100 yards or so.  While slowing down the path goes to where we park the cars which is gravel.  In trying to slow down my right ankle turned outward and there was an audible 'pop' that a gentleman heard from about 30 feet away.  Not sure to this day what happend but anyway I digress.  I can't do much cardio in the from of running as my right ankle always gets sore and stiff after about 15 minutes.  I took up swimming and swim about a half mile on my 'cardio' days.  I was wondering if I should try to run 'thru the soreness and stifness'.  I've been swimming since I was a kid and on the swim team for years but don't know if i'm getting all I can from my cardio workout.  I go on my lunch daily which affords me about 45 minutes of good solid exercise.  Weight training days are much easier for me to negotiate.

I'm having a crisis of sorts

I'm sure some may have noticed I haven't posted any workouts or daily caloric intakes.  This may sound weird but here's what i'm doing and i've done it before.  I've noticed that if I watch my 'diet' closely I end up not seeing the results I want.  Example: if I don't eat what I want and skip ceratain/some days I am bloated or otherwise unhappy with my progress.  So for my first two weeks or so I do my daily workouts with ONE day off a week, alternating between swimming for cardio and weight training for definition, NOT size.  My problem seems to be even lifting less weight I can gain muscle quickly, covered by my fat suit LOL.  I just got a new camera and will start posting pics.  Not only do I look for input but seeing myself in this light will be motivation in itself.  After about two weeks of what I call "Free for All' i'll start logging.  Any thoughts to this process will be taken with a totally open mind on my part.  thanks!

Which 'diet' would be best for me I wonder???

I hesitate greatly and balk at the term 'diet'.  To me that means eat like this and excersise like this for a while......FOR A WHILE.  Fitness and eating is a LIFESTYLE decision.  Enough ranting.  I would love to try the fat flush 'diet'.  My question is as big as I am (6'2" 275) can I possibly live on 1500 calories a day?  My muscle would starve wouldn't it?  Is there another caloric count I should/could use instead?  TIA
