| Instructions |
Bring a large pan of waterto a vigorous boil and add a splash of white wine vinegar, if preferred, this is not a must.
stir the water with a spoon to create a vortex, gently crack eggs into the water.
as the water returns to the boil, turn the heat down so that it is barely simmering. cook for 3 minutes.
meanwhile toast the muffin wilt the spinach in a pan with a lid, then place the toasted muffin halves on a plateand cover with the wilted spinach leaves.
gently position the eggs on top.
